
Steps
- Preheat the oven to 375°F.
- Lightly grease a baking dish with cooking spray.
- In a large bowl, mix together the black beans, broccoli, carrots, and chicken.
- Place the potato slices in the bottom of the dish, followed by the bean and chicken mixture.
- Top with a layer of cheese and season with salt and pepper.
- Bake for 25-30 minutes, until the potatoes are cooked through and the cheese is melted and lightly golden.
- Serve hot.
