Bean and Chicken Potato Bake   

A tasty and healthy entrée of beans, chicken, broccoli, carrots, and potatoes with a crunchy layer of cheese on top!

1. Preheat the oven to 375°F. 2. Lightly grease a baking dish with cooking spray. 3. In a large bowl, mix together the black beans, broccoli, carrots, and chicken. 4. Place the potato slices in the bottom of the dish, followed by the bean and chicken mixture. 5. Top with a layer of cheese and season with salt and pepper. 6. Bake for 25-30 minutes, until the potatoes are cooked through and the cheese is melted and lightly golden. 7. Serve hot.

* ¼ cup black beans * ½ cup broccoli florets * ½ cup shredded carrots * 3 oz. cooked chicken, cubed * 1-2 small potatoes, sliced * ¼ cup shredded low-fat cheese * Salt and pepper to taste
