Steps
1. Begin by heating up ½ tsp. of olive oil in a nonstick skillet over medium heat.
2. Add in the ground beef, breaking it into small pieces, and cook it until it turns brown.
3. Once cooked, season the beef with chili powder, cumin, and salt and pepper.
4. Place the quinoa into a pot with ½ cup of water. Bring it to a boil and let it simmer and cook for 15 minutes.
5. Next, add in the black beans, corn, and cooked beef. Mix everything together and let cook for 3-4 minutes.
6. Place the contents of the skillet into a bowl and enjoy with a side of avocado slices if desired.
