- Steps of Preparation:
- 1. In a medium cooking pot, heat a tablespoon of olive oil over medium heat.
- 2. Add the diced chicken, garlic, onions and bell peppers and cook for about 10 minutes, or until the veggies are slightly softened and chicken is cooked through.
- 3. Slowly stir in the white rice and cook for another 5 minutes or until the rice absorbs the flavors from the other ingredients.
- 4. Add salt, a dash of pepper and any desired herbs and spices. Taste for seasoning and adjust accordingly.
- 5. Serve with an extra squeeze of lemon juice.
