Steps
Steps of Preparation:
1. In a medium cooking pot, heat a tablespoon of olive oil over medium heat.
2. Add the diced chicken, garlic, onions and bell peppers and cook for about 10 minutes, or until the veggies are slightly softened and chicken is cooked through.
3. Slowly stir in the white rice and cook for another 5 minutes or until the rice absorbs the flavors from the other ingredients.
4. Add salt, a dash of pepper and any desired herbs and spices. Taste for seasoning and adjust accordingly.
5. Serve with an extra squeeze of lemon juice.
