1. In a medium bowl, combine the carrot and tomato. 2. In a small bowl, mix the extra virgin olive oil, white balsamic vinegar, dijon mustard, garlic powder, salt and pepper. 3. Pour the dressing over the salad ingredients and toss gently. 4. Refrigerate for 15 minutes and enjoy!
