Steps
1. Cook the pasta according to package instructions in salted water until al dente.
2. While the pasta cooks, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant.
3. In a bowl, whisk together the egg, grated cheese, salt, and pepper until well combined.
4. Once the pasta is cooked, reserve a little pasta water and drain the rest.
5. Add the hot pasta to the pan with garlic, then quickly pour in the egg and cheese mixture, stirring vigorously to create a creamy sauce. If it's too thick, add a splash of reserved pasta water.
6. Serve immediately, garnished with fresh parsley if desired.
