Chicken and Mushroom Stir Fry   

This easy-to-make stir fry is a delicious combination of chicken, mushrooms and vegetables, with a hint of garlic and ginger.

1. Heat the oil in a large skillet over medium-high heat. 2. Add the garlic and ginger, stirring constantly for 1 minute. 3. Add the chicken strips and cook for 4-5 minutes, until cooked through. 4. Add the mushrooms, bell pepper and broccoli and cook for an additional 3-4 minutes. 5. Pour in the soy sauce and season with salt and pepper. 6. Stir everything together and cook for an additional 2-3 minutes. 7. Serve hot.

Ingredients: - 2 tablespoons of vegetable oil - 2 cloves of garlic, minced - 2 teaspoons of ginger, minced - 2 boneless, skinless chicken breasts, cut into thin strips - 1 cup of mushrooms, sliced - 1 red bell pepper, chopped - 1 cup of broccoli florets - 2 tablespoons of soy sauce - Salt and pepper to taste
