Chicken Olive Tagine

This Chicken Olive Tagine is a dairy-free and delicious main dish with flavorful combination of chicken, eggs, olives and carrots!

Steps

1. In a large skillet, heat the oil over medium heat and add the diced chicken and onion. Sauté for about 5 minutes or until the chicken is cooked through. 2. Add the carrots, olives and spices and cook for an additional 5 minutes until the carrots are lightly browned and the onions are beginning to caramelize. 3. Crack the egg into the pan and mix everything together. Lower the heat and let simmer for 3 more minutes. 4. Serve hot over steamed couscous or in a warm pita.
