Salmon Kafta with tomato Salad

This Salmon Kafta is a traditional recipe that provides an interesting combination of the Middle East with the Pacific Northwest. Deliciously spiced Salmon Kafta are accompanied by a crisp tomato salad.

Steps

1. Preheat oven to 400° F. 2. In a bowl mix cumin, coriander, garlic, lemon juice, salt and pepper. 3. Place the cod fillet in the bowl and coat it with the mix. 4. Take a baking pan lined with parchment paper and place the cod fillet. 5. Bake it for 25 minutes. 6. While the cod is baking, cut cucumbers, tomatoes and onion in cubes. 7. Gently mix the vegetables in a bowl. 8. Add olives, olive oil and season with salt and pepper. 9. Serve cod fillet with tomato salad.
