Classic Potato and Pea Samosas

Steps

1. Prepare the dough by mixing flour, salt, and oil. Gradually add water and knead into a firm, smooth dough. Cover and set aside. 2. Heat oil in a pan. Add cumin seeds and let them splutter. 3. Add chopped onions and green chili; sauté until onions are translucent. 4. Add turmeric, coriander powder, garam masala, and salt. Mix well. 5. Add mashed potatoes and peas. Cook for 5 minutes, stirring occasionally. 6. Stir in chopped coriander leaves and remove from heat. Let the filling cool. 7. Divide dough into small balls. Roll each into a thin oval shape. 8. Cut the oval in half to form two semi-circles. 9. Take one semi-circle, fold into a cone shape, and seal the edge with water. 10. Fill the cone with the potato and pea mixture. 11. Seal the open edges with water, ensuring no gaps. 12. Heat oil in a deep pan. Fry samosas on medium heat until golden and crisp. 13. Drain on paper towels and serve hot with chutney or sauce.
