Steps

1. Rinse the flattened rice in a sieve under running water until soft. Drain and set aside. 2. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them splutter. 3. Add curry leaves, chopped green chili, and onions. Sauté until onions turn translucent. 4. Add chopped tomatoes and green peas. Cook for 2-3 minutes until peas are tender. 5. Stir in turmeric powder and salt, mix well. 6. Add the drained poha to the pan. Mix gently to combine all ingredients. 7. Cook for 2 more minutes, stirring occasionally. 8. Turn off the heat. Add lemon juice, chopped coriander leaves, and roasted peanuts. Mix well. 9. Serve hot garnished with extra coriander if desired.
