Classic Vadapav

Vadapav is a popular Indian street food consisting of a spicy potato fritter sandwiched between soft bread buns, served with tangy and spicy chutneys. This recipe recreates the iconic Mumbai snack for one serving.

Steps

1. Heat a teaspoon of oil in a pan, add mustard seeds and let them splutter. 2. Add green chili and ginger, sauté briefly. 3. Add turmeric, red chili powder, garam masala, and salt. 4. Mix in the mashed potatoes and cook for 2-3 minutes. Remove and let cool. 5. Prepare the batter by mixing chickpea flour, salt, and water to a thick consistency. 6. Shape the potato mixture into small round balls (vadas). 7. Heat oil in a deep frying pan. 8. Dip each vada in the chickpea batter, then deep fry until golden brown and crisp. 9. Slice the pav buns horizontally but keep one edge intact. 10. Spread green chutney and tamarind chutney inside the pav. 11. Place the hot vada inside the pav. 12. Optionally sprinkle dry garlic chutney on top. 13. Serve hot with extra chutneys on the side.
