Coconut Mango Sticky Rice

A delightful Asian-inspired dessert that combines the sweetness of mango with the creamy texture of coconut-infused sticky rice. Perfect for a light yet exotic finish to any meal.

Steps

1. Rinse the sticky rice until the water runs clear, then soak in water for at least 1 hour. 2. Drain the rice and add it to a pot with 1/4 cup water. Bring to a boil, then lower heat and simmer, covered, until water is absorbed (about 10-15 minutes). 3. In a separate saucepan, heat the coconut milk, sugar, and salt until sugar dissolves. 4. Mix the cooked rice with half of the coconut milk mixture and let it absorb for 10 minutes. 5. Serve the sticky rice with mango slices on top and drizzle with the remaining coconut milk mixture. Sprinkle with toasted sesame seeds.
