
Steps
- Heat olive oil in a skillet over medium heat.
- Season the chicken thigh with salt and pepper, then add it to the skillet. Sear both sides until browned, about 4-5 minutes each side.
- Remove the chicken and set aside. In the same skillet, add chopped onion and garlic, sautéing until translucent.
- Stir in brewed coffee, soy sauce, and brown sugar, scraping the bottom of the skillet for any browned bits.
- Return the chicken to the skillet, cover, and reduce heat to low. Simmer for 25-30 minutes until the chicken is cooked through.
- Serve hot, garnished with fresh parsley.
