Steps
1. In a small bowl, mix the ground coffee, brown sugar, smoked paprika, garlic powder, salt, and black pepper.
2. Rub the spice mixture all over the chicken breast, ensuring it's well coated.
3. Heat olive oil in a grill pan over medium heat.
4. Add the chicken breast and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
5. While the chicken is cooking, sauté the mixed vegetables in a separate pan until tender.
6. Serve the grilled chicken with the sautéed vegetables on the side.
