Steps

1. Rinse the quinoa under cold water, then cook according to package instructions (usually 2 parts water to 1 part quinoa). 2. While the quinoa is cooking, prepare the dressing by whisking together the olive oil, lemon juice, salt, and pepper in a small bowl. 3. Once the quinoa is cooked, fluff it with a fork and let it cool slightly. 4. In a bowl, combine the cooked quinoa, cherry tomatoes, cucumber, and half of the avocado (sliced). 5.
