Steps

1. Preheat oven to 375°F (190°C). 2. In a bowl, mix chopped spinach, cream cheese, Parmesan cheese, minced garlic, salt, and pepper. 3. Cut a pocket into the side of the chicken breast and stuff the spinach mixture inside. 4. Heat olive oil in an oven-safe skillet over medium-high heat. 5. Sear the chicken breast on both sides until golden brown. 6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through. 7. Serve hot and enjoy!
