Steps
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the almond flour, baking soda, and salt.
3. In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If using, fold in the dark chocolate chips.
5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
6. Flatten each cookie slightly with your hand.
7. Bake for 10-12 minutes or until the edges are lightly golden.
8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
