Steps
Preheat your oven to 400°F (200°C).
Thinly slice the zucchini, carrot, and sweet potato using a mandoline or sharp knife.
In a mixing bowl, combine the vegetable slices, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss well to coat.
Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.
Remove from the oven and let cool slightly before serving.
