
Steps

- Wash the ridge gourd thoroughly and slice it thinly using a mandoline or sharp knife.
- In a bowl, combine the olive oil, salt, paprika, garlic powder, black pepper, and cayenne pepper.
- Add the ridge gourd slices to the bowl and toss until they are well coated with the spice mixture.
- Arrange the seasoned slices in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until crispy, flipping halfway through.
- Remove from the oven and let cool slightly before serving.
