Steps
1. Preheat your oven to 375°F (190°C).
2. Wash the ridge gourd thoroughly and slice it thinly using a mandoline or sharp knife.
3. In a bowl, combine the olive oil, salt, paprika, garlic powder, black pepper, and cayenne pepper.
4. Add the ridge gourd slices to the bowl and toss until they are well coated with the spice mixture.
5. Arrange the seasoned slices in a single layer on a baking sheet lined with parchment paper.
6. Bake in the preheated oven for 15-20 minutes, or until crispy, flipping halfway through.
7. Remove from the oven and let cool slightly before serving.
