Delight in these Savory Stuffed Tomatoes, a vibrant and flavorful main dish perfect for a light meal. Juicy tomatoes are filled with a delicious mixture of quinoa, herbs, and spices, offering a healthy and satisfying option.

Steps

Preheat the oven to 375°F (190°C). Cut the tops off the tomatoes and scoop out the insides, reserving the flesh. In a bowl, mix the cooked quinoa, black beans, olive oil, minced garlic, cumin, salt, pepper, and chopped cilantro. Chop the reserved tomato flesh and add it to the quinoa mixture. Stuff the tomatoes with the quinoa mixture and place them in a baking dish. If desired, sprinkle grated cheese on top of each stuffed tomato. Bake in the oven for 25-30 minutes, until the tomatoes are tender. Let cool for a few minutes before serving.
