Steps
1. Start by shredding the zucchini using a grater and place it in a clean kitchen towel. Squeeze out excess moisture.
2. In a mixing bowl, combine the shredded zucchini, almond flour, Parmesan cheese, beaten egg, garlic powder, salt, and black pepper. Mix until well combined.
3. Heat olive oil in a non-stick skillet over medium heat.
4. Scoop about 2 tablespoons of the zucchini mixture and form a patty. Place it in the skillet and flatten slightly. Repeat with remaining mixture.
5. Cook for about 3-4 minutes on each side or until golden brown and crispy.
6. Remove the fritters from the skillet and let them drain on paper towels. Garnish with fresh parsley before serving.
