Steps
1. Boil the chopped yuca in salted water for about 15 minutes until tender. Drain and let it cool.
2. Mash the yuca in a bowl, season with salt and pepper, and set aside.
3. Preheat the oven to 200°C (400°F).
4. Roll out the puff pastry on a lightly floured surface and cut it into rectangles.
5. Place a spoonful of the yuca mash in the center of each rectangle.
6. Crack an egg on top of the yuca mash, being careful not to break the yolk.
7. Fold the pastry over to create a pocket, sealing the edges by pressing with a fork.
8. Brush the tops with a little oil or beaten egg for a golden finish.
9. Bake in the preheated oven for 20-25 minutes until puffed and golden brown.
10. Garnish with fresh herbs if desired and serve warm.
