Yuca Frita with Carimañola Filling

Steps

1. Boil the yuca pieces in salted water for about 15-20 minutes until tender but not mushy. 2. Drain yuca and let it cool slightly. Mash the yuca in a bowl until smooth. 3. In a separate bowl, mix cheese, cooked meat (if using), garlic powder, cumin, and salt to create the filling. 4. Take a portion of the mashed yuca, flatten it in your palm, and place a teaspoon of the filling in the center. Fold the yuca around the filling to create a patty. 5. Heat oil in a frying pan over medium heat. Fry each yuca patty until golden brown and crispy, about 3-4 minutes on each side. 6. Remove from oil and drain on paper towels. Serve warm with lime wedges.
