
Steps
- Heat olive oil in a non-stick frying pan over medium-high heat.
- Dice the banana and broccoli and add to the pan. Cook until lightly browned, stirring occasionally.
- Crack the eggs into the pan and stir until combined with the vegetables.
- Chop mushrooms and olives and add to the pan.
- Season with salt & pepper to taste and stir everything together.
- Cook until the eggs are cooked through and the vegetables are soft.
- Serve and enjoy!
