Steps
1. Heat the oil in a large skillet over medium-high heat.
2. Add the diced onion and carrots and cook for 3 minutes, stirring occasionally.
3. Add the red bell pepper and frozen peas and cook for an additional 2 minutes, stirring occasionally.
4. Push the vegetables to the side of the pan and crack the egg into the center. Scramble the egg and mix it with the vegetables.
5. Add the cooked rice and season with salt, soy sauce, and sesame oil.
6. Cook for an additional 3 minutes, stirring occasionally, until the rice is heated through.
7. Serve hot.
