
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beef strips and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the minced garlic and sliced onion, and cook until fragrant and slightly softened, about 2 minutes.
- Add the diced potatoes to the skillet and cook until they are golden brown and crispy, about 8-10 minutes.
- While the potatoes are cooking, blanch the broccoli florets in boiling water for 2 minutes, then drain and set aside.
- Once the potatoes are cooked, return the beef to the skillet along with the blanched broccoli.
- Stir everything together and cook for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste.
- Serve the garlic beef and broccoli stir-fry over a bed of rice or noodles if desired.
