Garlic Beef and Broccoli Stir-Fry

Steps

1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. 2. Add the beef strips and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside. 3. In the same skillet, add the remaining tablespoon of vegetable oil. 4. Add the minced garlic and sliced onion, and cook until fragrant and slightly softened, about 2 minutes. 5. Add the diced potatoes to the skillet and cook until they are golden brown and crispy, about 8-10 minutes. 6. While the potatoes are cooking, blanch the broccoli florets in boiling water for 2 minutes, then drain and set aside. 7. Once the potatoes are cooked, return the beef to the skillet along with the blanched broccoli. 8. Stir everything together and cook for an additional 2-3 minutes to heat through. 9. Season with salt and pepper to taste. 10. Serve the garlic beef and broccoli stir-fry over a bed of rice or noodles if desired.
