Garlic Butter Mushroom Rice

Steps

1. Rinse the rice under cold water until water runs clear. 2. In a small pot, bring water or vegetable broth to a boil. 3. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. 4. While rice cooks, heat olive oil in a pan over medium heat. 5. Add sliced mushrooms and sauté for 4-5 minutes until golden. 6. Add minced garlic and cook for another minute until fragrant. 7. Stir in butter, salt, and pepper. 8. Fluff the cooked rice with a fork and mix it into the mushroom garlic butter mixture. 9. Garnish with fresh parsley if desired and serve warm.
