Steps

1. Rinse the rice under cold water until the water runs clear. 2. In a small pot, bring water or vegetable broth to a boil. 3. Add the rice and a pinch of salt, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and rice is tender. 4. While the rice cooks, heat olive oil in a pan over medium heat. 5. Add minced garlic and sauté for 1 minute until fragrant. 6. Add sliced mushrooms and cook until browned and tender, about 5 minutes. 7. Stir in butter, salt, and pepper; cook until butter is melted and mushrooms are coated. 8. Fluff the cooked rice with a fork and add it to the pan with mushrooms. 9. Stir well to combine and heat through for 2 minutes. 10. Garnish with chopped fresh parsley if desired and serve warm.
