Steps

1. Preheat the oven to 400°F (200°C). 2. In a small bowl, mix together minced garlic and soy sauce. 3. Season the fish fillet with salt and pepper, then brush both sides with the garlic soy sauce mixture. 4. Heat olive oil in an oven-safe skillet over medium-high heat. Add the fish fillet and cook for 2 minutes on each side, until lightly browned. 5. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork. 6. Meanwhile, in a separate bowl, combine diced tomatoes with a pinch of salt and pepper. 7. Once the fish is cooked, remove it from the oven and let it rest for a minute. 8.
