Steps
1. In a small bowl, beat the eggs with salt and pepper.
2. Heat a non-stick skillet over medium heat and spray with cooking spray.
3. Add minced garlic and diced onions to the skillet and sauté until onions are translucent.
4. Pour the beaten eggs into the skillet and cook until scrambled, stirring occasionally.
5. Toast the slices of bread until golden brown.
6. Place the scrambled eggs on one slice of bread.
7. Top with sliced tomatoes.
8. Cover with the second slice of bread.
9. Cut the sandwich in half and serve.
