Steps
1. Preheat the grill or grill pan over medium heat.
2. Brush the chicken breast with olive oil and season with salt and pepper.
3. Grill the chicken for about 6-7 minutes on each side, or until cooked through. Remove from the grill and let it rest.
4. Cut the peach halves into wedges and grill for 2-3 minutes on each side until charred and softened.
5. Slice the grilled chicken into strips.
6. In a bowl, combine the mixed salad greens, sliced chicken, and grilled peaches.
7. Drizzle with balsamic vinaigrette and sprinkle with feta cheese if desired.
8. Toss gently and serve immediately.
