Healthy Indian Chicken Fried Rice

Steps

1. Heat olive oil in a pan over medium heat. 2. Add the beaten egg and scramble until cooked. Remove from the pan and set aside. 3. In the same pan, add the cooked chicken and mixed vegetables. Cook for 2-3 minutes until heated through. 4. Add the cooked rice to the pan and mix well with the chicken and vegetables. 5. Sprinkle cumin powder, turmeric powder, chili powder, and salt over the rice. Stir to combine all the flavors. 6. Add the scrambled egg back to the pan and gently mix everything together. 7. Cook for another 2-3 minutes until the fried rice is well heated. 8. Remove from heat and garnish with fresh cilantro. 9. Serve hot as a delicious and healthy side dish.
