Steps
1. Season the chicken breast with salt and pepper on both sides.
2. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
3. Add the chicken breast to the skillet and cook for 4-5 minutes per side, or until cooked through. Remove from the skillet and set aside.
4. In the same skillet, add another tablespoon of vegetable oil and sauté the minced garlic, grated ginger, sliced onions, and bell peppers until they are softened and lightly browned.
5. Slice the cooked chicken breast into thin strips and add it back to the skillet. Cook for an additional 2-3 minutes to allow the flavors to meld together.
6. Serve the spicy ginger garlic chicken hot with steamed rice or noodles.
