Hearty Vegetable Stew   

This colorful and hearty vegetarian stew features an array of vegetables and spices. Enjoy it on its own or serve it over rice for a complete meal.

1. Heat a large skillet over medium-high heat and add the vegetables, stirring often. 2. Once vegetables are softened, add the crushed tomatoes, garlic powder, oregano, cumin, paprika, salt, and pepper. 3. Stir everything together and cook for 1 minute. 4. Pour in the vegetable broth, reduce the heat to low, and cover the skillet. Simmer for 15-20 minutes or until vegetables are cooked to your liking. 5. Serve over cooked rice, if desired.
