Moroccan Vegetable Couscous

This delicious, fragrant royal-inspired dish is sure to please. Combining the flavors of Morocco--including fragrant spices and sweet raisins--with healthy vegetables, this dish will please any palate.

Steps

1. Begin by bringing the vegetable broth to a boil in a small saucepan. 2. Add the couscous, raisins, and spices. Stir to combine and reduce heat to simmer. 3. Cover and cook until couscous is tender and liquid has been absorbed, about 5 minutes. 4. Meanwhile, heat the olive oil in a medium sauté pan. Add the carrots and onions and cook until tender, about 5 minutes. 5. Add the peas to the skillet and sauté for another 3-4 minutes, until all vegetables are cooked through. 6. Combine the couscous and vegetables mixture, season with salt and pepper to taste and serve.
