Steps
1. Heat the 2 tablespoons olive oil in a pot over medium-high heat.
2. Add the beef to the pot and cook for 5-7 minutes to brown on each side.
3. Add the diced carrots, olives, onions, and potatoes and stir to combine.
4. Add enough water to cover the ingredients and bring to a boil.
5. Reduce the heat to low and simmer for 30 minutes, stirring occasionally to prevent the stew from sticking to the bottom of the pot.
6. Serve hot and enjoy!
