Moroccan Beef and Bean Tagine

A flavorful and hearty Moroccan tagine made with tender beef, beans, carrots, and eggs, seasoned with aromatic spices and garlic.

Steps

1. Heat some olive oil in a tagine or a large skillet over medium heat. 2. Add the beef cubes and cook until browned on all sides. Remove from the pan and set aside. 3. In the same pan, add more olive oil if needed and sauté the minced garlic until fragrant. 4. Add the sliced carrots and cook for a few minutes until they start to soften. 5. Return the beef cubes to the pan and add the cooked beans. 6. Sprinkle the ground cumin, coriander, turmeric, and paprika over the ingredients. Season with salt and pepper. 7. Stir everything together and let the flavors meld for a few minutes. 8. Make two wells in the mixture and crack an egg into each well. 9. Cover the pan and let the eggs cook until the whites are set but the yolks are still runny, or to your desired doneness. 10. Garnish with fresh cilantro or parsley and serve hot.
