Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix the olive oil, rosemary, thyme, garlic, salt, and pepper to create a herb paste.
3. Rub the herb mixture generously over both sides of the lamb chops.
4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until golden brown.
5. Transfer the skillet to the preheated oven and roast for 8-10 minutes for medium-rare, or adjust time to your desired doneness.
6. Remove from the oven and let rest for 5 minutes before serving.
7. Serve with a lemon wedge for extra zest.
