Steps

1. Preheat your oven to 400°F (200°C). 2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper to create a marinade. 3. Rub the marinade all over the lamb chops and let them rest for 10 minutes. 4. While the lamb is marinating, boil the cubed potato in salted water until tender, about 15 minutes. 5. Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, and salt. Mash until creamy. 6. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until golden brown. 7. Transfer the skillet to the oven and roast for an additional 5-7 minutes for medium-rare. 8. Serve the lamb chops with garlic mashed potatoes on the side, garnished with additional herbs if desired.
