1. Preheat oven to 200°C (390°F). 2. Mix rosemary, thyme, salt, and pepper; rub onto turkey breast. 3. Heat olive oil in oven-safe pan and sear turkey breast on all sides until golden. 4. Transfer pan to oven and roast turkey for 15-20 minutes or until cooked through. 5. Peel and chop potato; boil until tender. 6. Crush garlic and add to drained potato. 7. Mash potato with milk and butter, seasoning with salt to taste. 8. Slice turkey and serve alongside garlic mashed potatoes.
