Steps
1. Preheat the oven to 375°F (190°C).
2. In a small bowl, mix olive oil, thyme, rosemary, salt, and pepper. Rub it over the turkey breast.
3. Place the turkey breast in a baking dish and bake for 25-30 minutes or until cooked through.
4. While the turkey is baking, rinse the quinoa under cold water. In a small pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes.
5. Once the quinoa is cooked, fluff it with a fork and let it cool slightly.
6. In a bowl, combine the cooled quinoa, cucumber, bell pepper, lemon juice, and parsley. Mix well.
7. Slice the turkey breast and serve it alongside the quinoa salad.
