Steps

1. Preheat oven to 375°F (190°C). 2. In a small bowl, mix olive oil, rosemary, thyme, garlic powder, salt, and pepper. 3. Rub the turkey breast evenly with the herb mixture. 4. Place turkey breast on a baking sheet and roast for 25-30 minutes or until internal temperature reaches 165°F (74°C). 5. Meanwhile, steam cauliflower florets until very tender, about 10 minutes. 6. In a blender or food processor, combine steamed cauliflower, minced garlic, almond milk, and butter; blend until smooth and creamy. 7. Season mashed cauliflower with salt and pepper to taste. 8. Once turkey is done, let it rest for 5 minutes before slicing. 9. Serve sliced turkey breast over a bed of garlic mashed cauliflower and garnish with fresh parsley if desired.
