1. Heat olive oil in a pan over medium heat. Add cumin seeds and let them sizzle. 2. Add chopped onions and garlic, sauté until translucent. 3. Add diced potato and chopped capsicum, stir well. 4. Sprinkle turmeric powder and salt, mix thoroughly. 5. Pour water, cover, and simmer until vegetables are soft (about 10-12 minutes). 6. Remove from heat and let it cool slightly. 7. Blend the cooked mixture until smooth and creamy. 8. Return the puree to the pan, heat gently for 2 minutes. 9. Stir in lemon juice and adjust salt if needed. 10. Garnish with fresh coriander leaves and serve warm.
