Steps
1. Rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes.
2. In a separate pan, heat olive oil over medium heat. Add the sliced carrots and sauté until slightly tender.
3. Stir in the honey, dried thyme, salt, and pepper. Cook for an additional 2-3 minutes until the carrots are glazed.
4. Fluff the cooked quinoa with a fork and stir in any remaining herbs. Serve the honey glazed carrots over the herbed quinoa.
