Steps
1. In a small bowl, mix honey, soy sauce, olive oil, and minced garlic to create the glaze.
2. Season the chicken thigh with salt and pepper on both sides.
3. Heat a skillet over medium-high heat and place the chicken thigh skin-side down. Cook for about 5-7 minutes until the skin is golden brown and crispy.
4. Flip the chicken over and pour the honey glaze over the top. Reduce the heat to medium-low and cover the skillet.
5. Cook for an additional 10-12 minutes until the chicken is cooked through (internal temperature of 165°F).
6. Remove the lid and let it simmer for a couple of minutes to thicken the glaze.
7. Serve hot, garnished with fresh thyme if desired.
