Steps
1. Preheat oven to 350°F (175°C).
2. In a medium-sized bowl, mix together the avocado, broccoli, carrots, olives and olive oil.
3. Place mixture in a lightly greased baking dish.
4. Crack the eggs on top of the vegetables and season with salt and pepper to taste.
5. Sprinkle Parmesan cheese over the eggs and vegetables.
6. Bake in preheated oven for 20-25 minutes, or until eggs are cooked through and vegetables are tender.
7. Serve hot. Enjoy!
