Steps
1. In a mixing bowl, whisk together the egg, almond milk, erythritol, vanilla extract, and salt until fully combined.
2. Add the pureed mango to the mixture and stir until smooth.
3. Pour the mixture into a small saucepan and cook over low heat, stirring constantly until it thickens (about 5-7 minutes).
4. Once thickened, remove from heat and let it cool slightly.
5. In a serving dish, layer the custard with chopped strawberries on top.
6. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
