
Steps
- Rinse the quinoa under cold water.
- In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let cool.
- In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
- Garnish with fresh parsley and serve immediately or chill in the fridge for 30 minutes for flavors to meld.
