Steps
1. Rinse the quinoa under cold water.
2. In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let cool.
3. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
5. Garnish with fresh parsley and serve immediately or chill in the fridge for 30 minutes for flavors to meld.
