Steps
1. Preheat oven to 375°F.
2. Place salmon fillet on a greased baking dish.
3. In a small bowl, mix together olives, olive oil, thyme, rosemary, lemon zest, salt, and pepper.
4. Spread the olive mixture over the salmon.
5. Bake for 15-20 minutes, or until the salmon is cooked through and the olives are slightly browned.
6. Serve over a bed of cooked quinoa or couscous.
