Moroccan Lentil Soup

Steps

1. In a medium pot, heat olive oil over medium heat. 2. Add the garlic, cumin, coriander, paprika, turmeric, ginger, and salt. Cook for 1-2 minutes until fragrant. 3. Add the lentils and vegetable broth. Bring to a boil. 4. Reduce heat to low and simmer for 15 minutes, or until lentils are tender. 5. Add the diced tomatoes and parsley. Simmer for an additional 5 minutes. 6. Serve warm.
